ENERGY LOGS

This energy log base has just 4 ingredients. They’re quick to make, provide a slow release energy boost and can be souped up a lot, or not at all! They’re nourishful as is, or you can go big guns with adding adaptogenic herbs, seeds, nut butters & gentle warming spices. I make them in a log shape, then slice off when desired, which is often. Use pitted dates. If you want to pre-loosen them to make it easier on the blender, you can soak them in water) and then drain (but keep the water… it’s like date syrup and can be used for sweetening sauces, smoothies, teas) The dates are great for the digestive system, the oats offer slow releasing energy, and cacao is great for the gut as well as being rich in antioxidants, plus gives the chocolate hit, which we are all so often seeking, especially come the afternoon. Make in bigger batch and keep many a log in your freezer, play around with this base recipe by adding all manner of other ingredients (ideas below in the ‘how can I extend this’ section) If you do not have a blender, chop the dates as finely as possible (after soaking to make this easier) then continue to mix with other ingredients to form a dough, it will just be more ‘bity’ but still taste fantastical.

TO GATHER

2 handfuls pitted dried dates (opt- soaked in water to soften, drained)

4 tbsp oats (whole, rolled or ground into a flour)

1 tbsp honey

2 tbsp cacao powder

A dash of water if needed to loosen

HOW CAN I EXTEND THIS?

1 tsp ashwaganda or resihi or chaga powder / half a tsp of cinnamon / a pinch of nutmeg/ a pinch of lavender flowers, or rose petals/ a pinch of cayenne / pink himalayan salt / some seeds of choice / desiccated coconut/finely chopped nuts/ favourite nut butter/ freeze dried raspberries/ other dried fruit/ grass fed collagen powder. Simply add what you’d like to this base energy log recipe & enjoy! Use it as a vessel for adding plentiful nutritive bits and bobs, increasing plant diversity, or simply enjoy the simplicity as it is, which is also abundant in goodness!

TO DO

/ If you want a 'smoother log', place oats in a blender to turn it to oat flour. Or skip this and leave the oats whole!

/ Place dates, cacao and honey in blender,

/ Add a dash of water (1 tbsp) though skip this if you soaked them. Blend to a paste.

/ In a large bowl mix the chocolatey date paste and the oats together, with a wooden spoon and then knead with your hands to form a shapeable dough.

/ Split dough in half and roll into two logs! Wrap in baking paper and twist the ends like a christmas cracker. Pop in freezer (or fridge and slice as required).
