COCONUT CACAO PUDDING

A NOURISHFUL CHOCOLATE DESSERT. This is my go to verrrry quick dessert to make that really hits the spot. This takes 1 minute to assemble then needs some time in the fridge to set before you have yourself a delicious chocolate pudding/ dessert that huts the spot, and if you add the tofu for protein it’s even more of a nourishing win. Popular with all! you could also use this mixture and put in lolly moulds to make coconut cacao ice creamy lollies.

TO GATHER

Makes 2-3 ramekins

2 tablespoons of cacao powder


1 tbsp runny honey

2 dates (optional, soften these in water for 10 mins. Can use double date if not using honey)


250 ml carton of coconut cream (not creamed coconut) I use either Sainsburys or Blue Dragon who both do a 250ml carton.

1 tbsp silken tofu (optional for extra protein & a blood sugar friendly scaffold )

HOW CAN I EXTEND THIS?

This can be eaten as a pudding on its own or is good with fruit, or scoop onto/through oats for breakfast/ dip apple into it. Add a layer of peanut butter under or sprinkle with nuts on top for extra nutritive indulgence, and to make it stretch further. Sprinkle some seeds of choice / desiccated coconut/grass fed collagen powder. You don’t have to use them, but dates do a fab job at further sweetening the bitterness of the cacao and also give a hit of fibre full, antioxidant goodness. Or just stick with honey. A sprinkle of lavender or rose petals on top adds a certain ooof here!

TO DO

/ Put all ingredients in a blender or a vessel you can use a stick blender with- coconut cream (& silken tofu if using), cacao, honey (& dates if using). Blend until you have smooth, silky evenly coloured mixture.

/Taste it! Your sweet and my sweet if different, is it chocolatey enough, if you want a darker more deeply chocolate pudding, simply add another tsp or tbsp of cacao, and then honey to balance, and whizz up. You are at the helm of flavour to suit you here.

/Split the mixture equally between 2/3 ramekins (or whatever vessels you fancy).depending on your approach to portioning.

/ If you wanted to here you could pop a spoon of your favourite peanut butter at bottom of ramekin then top with the mixture!

/Pop in the fridge to set for an hour or two (depending on the efficiency of your fridge!)

/ Inhale.
